Arrow Head ( Ngaku) Chips For CNY

Chinese New Year snacks will be Fried Ngaku Chips

Ingredients:

Chinese Arrow Head - 10kg ( you can buy as many as you desired).
Cooking Oil
Salt

Method:

1.To get the Ngaku ready for frying, the skins must be removed and cleaned properly. The Ngaku is then left to dry.
2.You can use the typical slicer to slice the Ngaku into slices that resemble chips. One can choose to slice them first and put them into a pan waiting to be fried or you can choose to slice them on top of hot frying oil. If you opt for the former way, you need to add some salt and mix with the slices to prevent them from sticking to each other.
3.Make sure the Ngaku is dry enough, else the mixture of water droplets into the hot oil will react violently.
4.Make sure to keep stiring and flipping the chips to ensure both sides evenly fried. It is relatively fast for the chips to turn golden brown.
5.Use a strainer to scoop the Ngaku chips from the frying pan and leave the oil flow back to the frying pan.
6.Once the chips cool down, you can store them into containers. Some will not make it to the containers, they will end up in somebody’s mouths… hehe

The potato chips lookalike snacks that we normally eat are actually Ngaku or Arrowhead root (or just Arrowhead). Some actually called this Chinese potato, probably due to ngaku only available during the festive seasons.
Nga Ku chips taste like potato chips and you can be quite addictive to them once the bottle cap is opened.
