My Home Made Honeycomb Biscuit For CNY Recipe



Last time when I was teenage I try to make this and was failed. That time I was in Secondary School I study home science with cooking class at school. I was pretty in love with cooking and back home during CNY I wanted my mom to teach me but she doesn't know how and I love to eat this during Chinese New Year.
So now I wanted to try again and it works pretty nice. My hubby ate and he love it so much compare to Kueh Kapit.......


Ingredients:

  • 1 pack of coconut milk 200ml add in 200ml water
  • 100g castor sugar
  • 1 egg, beaten lightly
  • Oil for deep frying

Sift:

  • 125g rice flour
  • 125g plain flour

Method:

    You will need a kuih rose brass mould.

    Combine sugar and coconut milk. Use a handheld wire whisk to mix both ingredients until sugar has dissolved. Add in the egg and whisk till well blended. Strain the mixture through a wire mesh sieve.

    Stir in sifted flours and mix to form a smooth batter. If the batter is a bit thick, add a little more water until the consistency is just right.

    Heat oil in a wok. Put in the brass mould to heat up. When it becomes hot enough, remove the mould and dip into the batter. Make sure that the sides are coated with batter.

    Return the mould to the hot oil and deep-fry the batter till it turns golden brown and crispy. Shake a little to remove the pastry from the mould. Remove the kuih rose from the oil, then drain and leave to cool on absorbent kitchen paper. Store in airtight containers.

This is very easy any cheap Chinese New Year biscuit that you can make compare to outside they are selling very expensive. If you have your extra time why not make your own self and save a lot of money from buying expensive outside.... Is nice when people come visit you and you can share with them your own recipe.
